Maroilles - the most famous of the Avesnois cheeses, having a distinct flavour and pronounced taste. It first appeared in the 12th century and is named after the village bearing the same name. Square in shape and orangey-red in colour, this is one of the 36 French cheeses that have been granted A.O.C. certification (Appellation d’Origine Contrôlée) .Its cousin, Vieux-Lille or Gris de Lille, is also known as 'le Puant' ('smelly'). The cheese owes its characteristic taste and aroma to a distinctive maturing process, which encourages the growth of 'gras' on the outside, and gives it a greyish colour.
